Die Zucchini waschen, in kleine W\u00fcrfelchen schneiden, mit etwas Oliven\u00f6l in einer Pfanne anbraten und ebenfalls abk\u00fchlen lassen. Die getrockneten Tomaten abtropfen lassen &#8211; dabei das \u00d6l f\u00fcr das Dressing auffangen &#8211; und in kleine Streifen schneiden. Den Babyspinat putzen, waschen und trockenschleudern.<br><br>Dann das Dressing zubereiten. Hierzu das aufgefangene \u00d6l der Tomaten mit Balsamicoessig, Senf, Honig sowie Wasser verquirlen. Das Dressing mit Salz sowie Pfeffer abschmecken.<br><br>Bis auf den gehobelten Parmesan und die Cashewkerne alle Salatzutaten in einer gro\u00dfen Sch\u00fcssel mischen, das Dressing zuf\u00fcgen, unterheben und den Salat ein paar Stunden durchziehen lassen.
