Waln\u00fcsse hacken. <br> <br>Petersilie waschen, trocken sch\u00fctteln und ebenfalls fein hacken. Senf, Essig und 2 Essl\u00f6ffel Raps\u00f6l verr\u00fchren. Ei, N\u00fcsse sowie Petersilie unterheben. Alles mit Salz und Pfeffer abschmecken. <br> <br>Den Lauch putzen, waschen und quer in l\u00e4ngliche Rauten schneiden. Gem\u00fcsebr\u00fche mit Zucker aufkochen, den Lauch in die Br\u00fche geben und 5 Minuten garen lassen.<br> <br>Schweinefilet waschen, trocken tupfen und in 6-8 etwa 3 cm dicke St\u00fccke schneiden. Butterschmalz in einer Pfanne erhitzen. Das Fleisch darin 2 Minuten rundherum scharf anbraten und bei mittlerer Hitze bis zur gew\u00fcnschten Garstufe braten.
