Schokoladenr\u00f6llchen<br> <br><strong>Zubereitung:<\/strong><br>Zuerst die Karamellsauce zubereiten. Hierzu den Zucker in einem Topf unter st\u00e4ndigem R\u00fchren goldbraun karamellisieren lassen. Hierbei darauf achten, dass der Zucker nicht zu dunkel wird; sonst wird das Karamell bitter. <br> <br>Den karamellisierten Zucker mir 600 ml Sahne abl\u00f6schen und solange r\u00fchren, bis sich der Zucker komplett aufgel\u00f6st hat. Die Karamellsauce danach unter R\u00fchren 30 Minuten dicklich eink\u00f6cheln und dann abk\u00fchlen lassen.<br> <br>Unterdessen die Spekulatius in kleine St\u00fccke brechen und gleichm\u00e4\u00dfig auf die Dessertgl\u00e4schen verteilen. <br> <br>Im Anschluss die Mascarpone aufschlagen. Die restlichen 400 ml Sahne mit dem Vanillezucker steif schlagen und unter die Mascarpone heben. <br> <br>Die Masse auf die Spekulatiusst\u00fcckchen geben und mit der Karamellsauce bedecken.
