Die Stangen in ca. 5 cm lange St\u00fccke schneiden.<br> <br>Zwiebel sch\u00e4len und fein w\u00fcrfeln. Die Fussili nach Packungsanleitung kochen und abgie\u00dfen. Dabei 150 ml Nudelwasser auffangen und beiseite stellen. <br> <br>Unterdessen eine Pfanne erhitzen und die Schinkenw\u00fcrfel darin anbraten. Die Zwiebeln zuf\u00fcgen und 5 Minuten anschwitzen. <br> <br>Im Anschluss den Spargel zuf\u00fcgen und 5 Minuten mitgaren. Mit Salz und Pfeffer w\u00fcrzen.<br> <br>Sahne und Nudelwasser zugeben und alles kurz aufkochen. Das Eigelb mit etwas Kochfl\u00fcssigkeit verquirlen und diese in die So\u00dfe einr\u00fchren ohne, dass diese zu kochen beginnt. Zuletzt die hei\u00dfen Nudeln unterheben. <\/p>\n\n\n\n<p>Die Pasta auf Tellern verteilen.
